Allow me to present a fast and easy one-pan dinner (Kate, you can totally make this one):
Easy ‘Tropical’ Dinner
Cook together in a skillet:
1 can (drained and well rinced) black beans OR enough already cooked poultry (cubed) to feed 4 people.
+
1C white wine (or orange/tropical-fruit juice tempered with lemon juice)
1 tsp dried sage
1 tsp dried thyme
2 tsp minced garlic (about 2 large cloves)
1 tbsp lime/lemon juice
+
2C couscous
Add, and cook for another minute or so (to soften things up a little bit):
1/2 a can of diced pineapple (drained)
1 can mandarin orange sections (drained)
Coulis:
In a blender, combine and purree until smooth:
1 can mango slices (drained)
1 roasted red pepper (from a jar, drained)
2 tbsp white wine
Drizzle the couscous mixture liberally with the coulis, and serve.
Note: Throwing some cilantro or tarragon in with this might be nice, too.
