I just spent a wonderful fourk-and-a-half hours with Ami_B and Arndis baking cookies and chattering away. :-)
We will have to do this again some time soon. :-)
Ami brought her wonderful chocolate chip cookie recipe, Bronwyn brought her Anythign Cookies recipe and adapted it to be mint-chocolate (like those girl-guide cookies, but chewier).
I had originally planned to make no cookies what-so-ever, but rather to spoon out sugar and what-not, and basically be the assistant.
And I ended up making up a cookie recipe on the spot.
Bronwyn named them 'Spice Puffs' - a very appropriate name, if ever there was one.
The recipe was entirely improvised and involved no measuring implements what so ever.
As such, what follows is basically guess-work. Good luck to you all, should you wish to try it.
*~*~*~*~*
Spice Puffs
In a bowl, blend together (using an electric mixer because they need to be fairly fluffy)
2 eggs (definitely 2 eggs)
1/2 tbsp ground cloves
1/2 tbsp vanilla extract
1/8 tsp rum extract
1/8C - 1/4C hot chocolate powder (like the stuff from Carnation or whatever)
1/3C - 1/2C brown sugard (loosely packed)
1/2 tbsp baking powder
1/4tsp - 1/2tsp really well-crumbled candied ginger
1/4C-1/3C vegetable oil
Add to the we mixture and blend some more:
1C white flour (or less - add it in bits until the consistency is somewhere between 'batter' and 'stiff dough' - it is supposed to be fairly light and fluffy as dough goes).
Then add:
1/3C - 1/2C white chocolate chips (stir them in with a spoon).
Drop by the tablespoon-full (approximately) onto a well-greased cookie sheet.
Bake for 5 minutes @ 350F.
You need to bake them fairly quickly after making the dough, otherwise the consistency will change.
This batch will make about 20 cookies, give or take - so about two trays worth. Cook them one right after the other so that you get the properly puffy quality. :-)
In other news: Ami is trading one of her marvelous glass pieces (a mirror framed in blue and made from some of our wedding blobs, no less! Whee!) in exchange for my extra copy of "The Ancient Muse" (Loreena's new one). :-)
In further other news: I recently got "American Doll Posse" (Tori) and "The Little Mermaid" (soundtrack), both of which are awesome. :-)
Whee! :-D
Life is so, so good right now. :-)
The dish-washer is washing, my teeth are clean, and it is definitely time for me to hit the sack, as I've got to leave for work in... about nine hours. :-D
- TTFN,
- Amazon. :-)
