Okay, so Lumpy_Lia asked for this recipe.
This is the doubled recipe, because it's easier to get the amounts right:
Ingredients:
3 C vegan dark-chocolate chips + 1 tbsp veggie oil
1 package silken tofu from loblaws (not the PC kind -- It comes in a plastic box... It works out to about 2.5C at any rate)
1/4C chocolate soy milk (I use those "juice box" ones... You can use pretty much any liquid you like, though)
1/4 C liquid flavouring (the recipe suggests amaretto, but I've used both raspberry sauce and vanilla-diluted-with-water, both to great effect).
Instructions:
1) In a pot, melt the chocolate (the oil keeps it from burning) and the soy milk. Mix until smooth.
2) Add the silken tofu and the liquid flavouring of your choice, and blend with a hand-mixer until everything is nice and creamy.
3) Scrape it into a nice bowl and put it in the fridge for 2 hours (minimum) until it is nice and solid.
Serve with what-ever garnish delights you. :-)
The Mousse is smooth and light and easy to spoon. :-) I approve. :-)
The recipe is modified from the "Naked Chocolate Mousse" recipe in "The Garden of Vegan" cook book. :-)
Note: It is also good if you add ground almonds or hazelnuts to it. :-) Very yummy. :-)
