Made Cupcakes. :-D

They are based on Nigella Lawson's superb and easy brownie recipe, so you know they'll be really, really good. :-)
Chocolate Peanut Butter Cupcakes
Preheat oven to 350F.
Cream together:
1/4C margarine (or butter or shortening, etc)
1/4C peanut butter (I used the 'just peanuts' stuff, but I suspect any old kind will do)
1/2C granulated sugar
Beat in:
3 eggs
1/2 tbsp vanilla
Add and blend:
3/4C chocolate chips, MELTED
Stir in:
1/4 C cocoa
1/2 tsp salt
1/2 tsp baking powder
Add:
1 C flour (I used wheat, but Amaranth, for e.g., would work - you just might need extra flour)
Blend everything together until it is nice and smooth.
Add:
1/4 C (or more) peanut butter chips (or peanuts, or a combination there-of)
Mix well.
Spoon into a well-greased muffin tin, and bake for 20 minutes (or there-abouts - it's 20 minutes for *my* oven).
Allow to cool (if possible) and serve to your adoring fans. :-)
Makes 12 muffin-sized cupcakes. (As in: You could cut them into quarters and call them two-bite brownies. ;-)
Mmmmmmmmmmmmm... They're gooooooood. :-) The peanut butter gives them an extra creaminess, I think. :-)
