This has been a busy weekend.

Dinner party last night was *fantastic*. I had a fabulous time. :-D

My random chicken dish was a hit, so herein I present the recipe for Random Chicken (insofar as I remember it):

Random Chicken

Take 1 chicken breast OR 2 chicken thighs (boneless and skinless) per person, and slice them into thin strips.

In a deep pan (like a cake pan or a casserole dish) combine:

White wine (to the depth of about 1.5cm-2cm)
Pomegranate juice (enough to make the liquid pink, so not *that* much. A splash, if you will)
1 tin of peach slices - rinsed and chopped into chunks (use a big tin for 6+ people and a small tin for 5- people).
1 red pepper, diced
1 tsp dried sage
1/2 tsp each dried thyme & dried, crumbled tarragon
1-2 pinches black pepper
3 tbsp (or less, if you're making a small batch) of olive-oil-balsamic vinagrette (or just olive oil. I don't think it's that big a deal).

Add the chicken strips and mix everything together so that the chicken is fairly well covered.

Allow to sit in the fridge and marinate for about 2 hours.

Then cook at 200F for 3 hours (or at 350 for 1.5 hours) so that the liquid boils off and the flavours seep into each other.


What I've described makes enough for 9 people to have *a little bit* each. (I didn't have quite enough chicken, though, and didn't use the whole tin of peaches. ;-)


Anyway. It's really good, and everyone liked it, so give it a go. :-D

Also: Saw the first of the newly upholstered chairs that my mom is doing for my xmas present. They look really good. :-D Yay! :-D

I told her I've got a new job. (But I didn't tell *you* that, I don't think. Not until now, anyway. I was sitting on the news all week, and there it is. I start on December 10th. Go me! :-)


Anyway. Gotta put my laundry in the dryer. :-)
