I had my Mom over for dinner last night. Partly to keep her occupied (it was the 5-year anniversary of my Dad's death), and partly because her birthday's tomorrow, so I figured "why not combine two events?". :-)
The menu was as follows:
Salad (which she really liked):
A warm salad of mesculine greens, red pepper strips, artechoke hearts, and sauteed shrimp & pecans with a dressing of citrus-infused olive oil & sesame oil, lemon juice, apple cider vinegar, maple syrup, garlic (or large, raw clove), black pepper, dill, sage, and basil.
Entree:
Broiled salmon fillets cooked in maple syrup served on a bed of wild rice (with sauteed mushrooms, red peppers, and garlic), with a side of steamed asperagus.
Dessert (provided by Mom):
Caramel cupcakes w/ raspberry sauce (stewed raspberries w/ lime juice & a bit of water to thin --> made by me).
Beverages:
A dry Riesling (Jackson Triggs) was served with dinner. [Quite sharp, I confess. I think something slightly milder would have done better with this meal (but that's me)].
Rooibos Tea was served with dessert.
It was all eaten up, and greatly enjoyed by both of us (even if I'm saying so myself). :-)
A plate was made up for my Dad as well, with many cashews added (they're his favourite). :-) Insense of myrrh, cedar, and sandal-vetivert was burned in his honour, and candles were lit as well. :-)
For her birthday, I got my Mom a manicure and a bottle of white wine (a chardonay (sp) with a slightly buttery finish).
And that was yesterday. :-)
Today, I hunt up books from the library, and mark a few book reports (from my Shamanic Traditions students). :-)
I'm actually thinking of having white wine and chocolate ice-cream for breakfast this morning. Not the healthiest way to start the day... But tasty. :-)
