Going to try out the following recipe in the next day or so. :-)

Apricot White Chocolate Almond Cookies
Cream together until fluffy:
1/4C softened margarine/butter
1/2C melted white chocolate
1C organic granulated sugar
1-2 eggs
1 tsp almond extract
Mix in, until smooth:
3/4C flour
3/4C ground almonds
1/4tsp salt
1/2tsp baking soda
1/2tsp baking powder
1/2tsp ginger
Stir in until well blended:
1/2C chopped dried apricots
Form into balls (D=toonie) and drop onto a greased cookie sheet. Bake @ 350F for ~15 minutes (until golden). Allow to cool and serve. Yummy. :-)
Makes ~22 big cookies.
