So, I thought I'd draw everyone's attention to this:
This Saturday, March 29th, between 8pm and 9pm, local time (everyone's local time), turn all of your lights off for one hour.
This is a global event meant to draw attention to energy consumption. :-)
(As far as I'm concerned, it gives me a lovely excuse to do things by candle-light. ;-)
I've marked it on my calender. You mark it on yours, and lets let the world go a little darker, for a little while. :-)
In other news: Had lunch with my mom today, and it actually went really well! :-) Yay! :-D
Also: Must try to print out the passport forms again, so that I can get my father-in-law to be my guarantor (so I can get my freaking passport!) tonight. :-)
Lastly: Spent the morning making cake and CDs. The cake went well (recipe below the cut) and the CDs went well, too. (The CD is called 'Wanderlust' and is a mix of songs done by my choir from last year and this year - I think it turned out quite nicely). :-)
Raspberry Chocolate Cake
2 1/4 C flour
1/4 C hot cocoa
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 C hot chocolate mix (powder)
1/2 C butter/margarine (softened)
1/2 C frozen raspberries (thawed)
1 C vanilla yoghurt
1 tbsp vanilla
2 eggs (separated)
Preheat the oven to 350F
Whip egg WHITES until they form stiff peaks.
Cream together: butter, raspberries, yoghurt, hot chocolate mix, egg YOLKS, and vanilla.
Stir remaining (dry) ingredients together loosely, then add the butter mixture and blend everything together.
Add the egg whites and fold into the mixture - this should make a very thick, sticky batter that is almost, but not quite, dough-like.
Grease two or three small loaf pans and dust them with cocoa.
Scoop the batter into the pans until they are about 2/3 full.
Bake for 40-60 minutes, testing with a skewer to make sure they're done.
Wait two minutes, then run a knife around the edges of the pans to loosen the cakes.
Turn out onto a wire rack to finish cooling.
Makes a fairly dry, dense cake that goes well with yoghurt or on its own. :-)
